1. Lemon chicken with orzo - 4 out of 5 I loved this but my husband thought it was alright. You can't please 'em all the time can ya?
2. Crispy tofu triangles with asian dipping sauce - 4 out of 5 Again, I loved it but my husband...well, he'd take a big steak over tofu anyday. I do think it'd be better if it was marinated in the sauce and then crisped up, but I'm not sure it could get crispy that way. Also, I don't fry things often so I almost burned the house down...twice. I really think you could crisp it up without all the oil - and protect your home while doing so.
3. Baked crab rangoons - 2 out of 5 Maybe I'm just so used to the stuff you get at Chinese restaurants, or maybe it was because they were baked, but these weren't yummy. Granted, I still ate them.
4. I got started on the "fig newtons" this morning. I'll report next week.

Pin Worthy?
Freezer Breakfast Burritos - 5 out of 5, ABSOLUTELY pin worthy! I never get enough protein in my breakfast during the week and this is the solution to that problem. A great grab 'n' go breakfast. I got a "My wife is awesome!" comment from my husband and his coworker said I need to take orders and sell them. I admit, they aren't the best tasting burritos I've ever made but perhaps a little green chile will solve that problem. :)
Hungry Girl Crunchwrap Supreme - 5 out of 5, ABSOLUTELY pin worthy! So yummy, totally meat free, healthy, & super fast. You can't ask for anything more from a weekday dinner. That said, I did use full fat cheese and light sour cream instead of fat-free. I also bought tostada tortillas instead of using baked tortilla chips...just seemed easier to me.
Try 'em out, I think you'll be pleased!

Recipes February 26 - March 3
Why hello there wonderful readers! Can you believe it's going to be March this week? I admit, winter is my favorite season (I know, *gasp!*), however, I do love seeing the new growth and blooms that appear during spring. It gives me a renewed energy and positive outlook on what's to come. Farmer's markets, tubing down the river, cookouts, beer...oh the list goes on and on.
When I was going through my "I'm Hungry" board on Pinterest yesterday to pick out what I'll make this week, I realized something. I pin mostly sweet things, soups/chili, and pastas. And unfortunately, those things aren't what I've been craving lately...I have zero desire to eat meat right now but I have to get protein from somewhere! So it took me a while to choose our meals for this week, but I managed. Enough about that, let's get this show on the road!
1. Lemon Chicken with Orzo - seems fairly healthy (I will be omitting those olives!)
2. Crispy Tofu Triangles with Asian Dipping Sauce - I'm enthralled by crispy tofu...mainly because I've never been able to get mine crispy!!
3. Baked Rangoons - these are my favorite from the American-Chinese buffet & I figured I need something else to go with the tofu triangles
4. And for dessert I shall be making Fig Bars! I'm skeptical about this one...seems somewhat time consuming. We shall see.

Resolutions...a month & a half in.
Alrighty. I purposely haven't posted about this until now. Mainly because I get tired of the hype and also because I prefer to make goals for the year rather than resolutions. Ah, semantics. But for whatever reason I equate 'resolution' with the bad and 'goals' with the good. Maybe because resolutions are often broken...or maybe it's my resolutions that are often broken.
At any rate, I have a note hanging on my bulletin board titled "2012 Goals".
As for our finances, even with a financial advisor/tax preparer for a mother, I have never been able to keep track of what comes in and what goes out. Which is amazing for someone who manages 24 different funds at work. And honestly, I think it's because I've never had a system. I am very much a systematic, follow the rules kind of girl.
I don't remember how I stumbled across it, but I came across a blog post by Echoes of Laughter detailing a bill binder.
Considering I didn't have any system at all, I decided to give it a shot. So far so good. That said, we're only a month in. :)
For me, it works. It's all in one place and the papers don't pile up underneath my desk waiting for me to file them--which never happens by the way. And it's great that I can see the entire month of bills in one glance. I started writing down what we pay in groceries every week just so I can see what we spend on average. Soon I'd like to create an actual budget to stick to. But again, I need a system.
Have you had any real success with creating a budget & sticking to it? What's your advice?
