What's (Currently) Working For Me

Hello everyone!  I thought I'd check in and discuss what's going on in my fitness and wellness life right now.

I made the decision a couple of weeks ago that I'm going to workout Monday through Friday.  When trying to figure out a way to track my goal, I stumbled upon the Way of Life app.


They call it the 'ultimate habit building app'.  It's basically an app where you add goals and track them each day.  Right now all I have on there is "exercising".  I figured I'd make this easy on myself until I built up momentum so I define exercise as some kind of physical activity.  Brisk walking works.  Squats, pushups, and crunches work.  As long as it's something.  This app keeps me accountable...if I don't exercise, I have to log a big fat red X for that day.  Not fun.  It also made me realize I missed working out on Tuesdays a lot.  Why?  Because Zaxby's (casual fast food restaurant) gives a discount to employees where I work and I tended to choose that over working out.  So I made a conscious decision not to go there anymore.  Go me!  I also changed my schedule so that I eat part of my lunch at noon and then go workout at 1:00pm so I can watch The Chew while exercising.  Hey, don't hate...it's what gets me through.  :)

Thanks to my sister, I started using Lose It again.


This blog post has a pretty good review with lovely images.  I loved their app when they first started and now that they've made their website more 'social', I've rekindled my relationship with Lose It.  I've tracked my food and exercise for several weeks now and it's all thanks to their challenges.  I'm doing two right now:
  1. No Miss November where you aim to log the most days between November 1 and November 30.
  2. Holiday Move It & Lose It where you aim to log the most days between October 31 and January 1.
Honestly, I don't think I'd be tracking as well as I am had I not joined these challenges.  I signed up for Weight Watchers a couple of months ago and did I log?  Nope.  Not even knowing I was wasting all that money.  Give me a couple of challenges and some badges and the competitor in me comes out!  I'm kind of scared what will happen once the holidays are over and/or I get really busy.  I'm hoping I will have made tracking such a habit that I continue to do it.  Or that I've seen such great results that I continue to do it.  Only time will tell I suppose.

Unfortunately, When I weighed myself this morning I hadn't lost any weight...but nor had I gained!  I've decided to go another week with what I've been doing and if still no change, I'll mix something up in my diet/exercise routine to see if it helps.  Here it is in all its glory:

There's a two year period where I obviously wasn't using Lose It.  My starting weight was weight gain from right after my wedding when I went crazy with the food and no exercise.

What's Cooking?

My kitchen has been busy lately!

I've always wanted to try my hand at making sopapillas and these came out alright.  I'm used to very airy sopapillas and these were more dense like bread.  That sure didn't stop me from eating them!



These oven-baked chimichangas were yummy!  I've never baked burritos/chimis and it made the tortillas have such a wonderful texture.  Usually when they go into the oven they're covered in sauce and everything gets so soggy.  Not so with this recipe!



This recipe for Chicken, Spinach, Goat Cheese Quesadillas with Avocado Sour Cream left a lot to be desired.  I think the chicken I used was too bland maybe.  I don't know, but I wouldn't make this again.



And same thing for this baked quinoa and broccoli casserole.  I used a vegetable mix in place of the broccoli and used asiago in place of some other cheese.  I think the combination of those two just didn't sit well with our tastebuds.  Such a waste of perfectly good quinoa.  :(



This Weekend Brunch Casserole was good if you like super rich and heavy breakfasts.  There's crescent rolls on the bottom so you can imagine how soft and chewy they stayed (not in a good way).  Also, I feel it called for entirely too much mozzarella cheese.

This was definitely an interesting recipe.  Mine did not come out looking like the picture.  I must've used too much butternut squash because you couldn't find the macaroni in my mixture contrary to what this picture shows.  This is roasted butternut squash and goat cheese macaroni by the way.  Tasted on the sweet side due to the butternut squash.



Yes, I decided to try to make a bloody mary.  No good.  The Hubs said it might be because I used tomato juice instead of Clamato or the like.  All I know is that I'll have a professional make me one the next time I decide to try one.



Don't you hate it when photos lie?  This one does!  Look at how yellow that soup is.  This recipe doesn't come out looking like the picture at all.  I guess ultimately that doesn't matter; I was just sorely disappointed.  The soup is good though.  Except the chicken tortilla soups I'm used to have crispy tortillas as a topping.  For this one you just slice corn tortillas and plop 'em in there.



These spicy pork lettuce cups with noodles were really good.  I'm beginning to realize I like lettuce wraps very VERY much.  But I couldn't find the noodles so we just used rice.  Just as yummy! 



I made these for tailgating.  Beer, pretzels, peanut butter (and sugar), and chocolate...you really can't ask for more.  YUM!!



Corona and lime chicken bean dip.  Eh.  That is all.



Ranch-pepper crackers.  Instead of using a ranch packet I made my own mixture.  You can find the recipe here.  She has other mixes too.  Pretty neato if you ask me.  These crackers have a nice taste.  I especially love the heat.  It blows out my palate and stops me from snacking on other things.  Haha!



Let's all give The Hubs a big round of applause for making the recipe below for the soup/chili and sandwich day his office held the other day.  He said it wasn't a hit because of the spice, but I loved it.  Vegetarian sweet potato chili for everyone!!



Ham and cheese quiche.  Eh.



Baked french toast.  Only make this if you're not going to have leftovers.  I didn't think it was very good reheated.  But then again, I'm the girl that doesn't like soaked bread type texture.  I'm not sure if I've ever had bread pudding. but I probably wouldn't like it. 



Rustic autumn fruit tart (two apples, one pear) - don't skip the apricot preserves...it really makes it.  I know, I was surprised too.



These were awful.  Tossed them all out...such a waste of freakin' expensive eggs.  And no, my chickens haven't started laying yet.  :(  First, I think I used too fresh of eggs so I couldn't peel them.  The egg kept sticking to the shell.  Then the yolk looked funny.  Not the powdery yellow I'm used to.  I'm not sure if it was because they weren't cooked long enough or if it was because they were too fresh.  Do eggs stick to the shell when they haven't been cooked long enough?  But all of that aside, the recipe called for minced shallot;  which I've determined, I DO NOT like in deviled eggs.  Aagh!  I so wanted this to go well...  maybe I'll get my grandmother's recipe the next time I see her.

Recipe Results


I made this "Cracker Barrel Hash Brown Casserole" for a breakfast retirement celebration I attended.  It was okay.  I think if I'm going to eat unhealthy, I want it to be very very good...and it wasn't.


I made this "Fresh Strawberry Upside Down Cake" for the Hubs' birthday.  I was pleasantly surprised.  The cake fell apart when I dumped it out of the pan and then molded because I didn't put it in the fridge, but other than that, it was pretty good.


I had some leftover frozen brisket I hadn't used so I decided to roast it and shred it for bbq sandwiches.  I had to guess on the cook time and I think I over cooked it.  :(  It was really dry but we still ate it all!


This apple pie infused bourbon is really yummy!  We mixed it with sweet tea but I'm sure you could mix with cider and it would be just as good.


Made this jalapeno popper dip for tailgating last weekend.  Winner!


Made this buffalo chicken dip for tailgating last weekend.  Not a winner!  Well, the hubs liked it...I preferred the jalapeno dip.


Broccoli pasta.  Healthy.  Burnt broccoli.  Enough said.

The hubs and I made this list the other day on our ride back from Orlando.  I'm hoping we'll cross more off than we add.  I didn't include Italy since I know we're going there soon anyway.  Here's my question to you:  how does one travel in a country where one doesn't know the language?  Going to China scares me!

Chicken Run!

Remember that movie??  Well I do...like it was yesterday.  Except it was last Sunday.  And amazingly enough, I have video of it.  Well, of the escape...I was not about to let my husband videotape me chasing a chicken through the woods for an hour.

In watching the video back I learned two lessons:
1.  Only herd the chickens to the backyard when all four are together.
2.  Only herd the chickens to the backyard when the gate is already open.

Here's what happened.  I thought it'd be neat to have a video of me moving the chickens to the backyard for you guys to see.  If we're in town, I always move them to the backyard on Saturdays and Sundays so they can roam around.  I still haven't figured it out but somehow the brown chicken ended up closed up in the coop with the other three chickens outside of the coop (but still in the run) the night before.  That's why initially you only see three chickens and hear me ask, 'What'd you do with the other chicken?!' and the Hubs go, 'I didn't do anything with the chicken!'  Isn't it funny how I automatically blame him?  Anyway, the rest of the video speaks for itself. 

What we didn't record was the HOUR we spent tromping through the briars, vines, and poison ivy back and forth in the 'woods/brush' around the back of the fence.  And finally, the only thing that worked was moving the three chickens from the backyard back to the chicken run so the 'lost' chicken could see/hear them and move towards the coop.  It was ridiculous.  And about 45 minutes into it I got the feeling she had no intention of reuniting with her sisters and just wanted to mess with us.

I couldn't figure out how to edit out the lame parts of this video so here it is in all its glory.

What is Unitarian Universalism?

So when I mentioned the other day that I started going to a UU church and love it, it didn't occur to me that I might should expand on what Unitarian Universalism is.  I find it a tad funny that that didn't occur to me since I didn't even know what it was until my first year of graduate school.

Now, I'm new to the UU thing so I'll try my best to discuss it based on their website and the general feel I've gotten from attending services.

Basically, UU congregations share seven principles but individuals may hold different beliefs.  On their website they list the following beliefs: Atheism and Agnosticism, Buddhism, Christianity, Humanism, Judaism, Paganism, and "others" (Islam and Hinduism).  Apparently these last two haven't historically been part of their tradition but there's been growing interest.

The seven principles are:
  • The inherent worth and dignity of every person;
  • Justice, equity and compassion in human relations;
  • Acceptance of one another and encouragement to spiritual growth in our congregations;
  • A free and responsible search for truth and meaning;
  • The right of conscience and the use of the democratic process within our congregations and in society at large;
  • The goal of world community with peace, liberty, and justice for all;
  • Respect for the interdependent web of all existence of which we are a part.
As for me, I went to church with my family pretty much every week (sometimes more) from when I was a baby (I'm assuming since I don't remember back that far) until I was in college.  Even then, since we lived in the same city, I went with them fairly often.  I grew more and more distant from the church in college and especially during graduate school when I became more and more liberal.  I longed to go to church (my sister says out of habit) but I couldn't sit through services anymore knowing their views didn't mesh with mine. 

And what are my views?  If you want to put a label on it, I guess I'd be agnostic.  I neither believe nor disbelieve.  It sounds like such a cop-out.  Haha!  All I know is that I believe in those seven principles above.  I believe my homosexual friends should have the right to be married.  In fact, it's shocking to me that this inequality exists.  And I also believe that not one of those beliefs listed above are better or more right than any of the others.  I don't think any one of them should convert anyone else to their belief system. 

That's what led me to the UU church.  I really enjoy it because it's still in a traditional service format.  I guess for some reason I was under the assumption that it wouldn't be.  There's the opening stuff, offertory, sermon, and closing stuff.  There isn't prayer (at least where I go) and the "hymns" and recitations don't mention a specific God but rather, reflect the principles.  I've thought about stealing one of the hymnals to take home and play on the piano so I can learn the music--I even looked it up on Amazon...$35.  It's been disconcerting going from knowing the majority of hymns (from my years in the church) to not knowing any.  Though, when we went the last time we sang 'This Little Light of Mine' at the end of the service...I knew that one!  They also do this 'closing circle' thing where they recite something I haven't learned yet so I just stand there looking like an idiot.  I'm sure they don't think that but I sure do feel like it!  The Hubs recited it a couple of Sundays ago and I stared at him in shock.  Turns out he memorized it right before we stood up to do the closing circle! 

Also, the UU church I attend doesn't have a minister; either because it's too small or because they don't want one.  I haven't determined the reason yet.  I gather that some congregations don't like having a minister because it lessens the members' ability to have open discussions/input on various topics.  What we have instead are speakers and a retired UU minister who comes up every couple of weeks from Atlanta to do a sermon for us.  I didn't think I'd like not having a minister but honestly, I think I like it better.  Different views...different information...it's a good thing. 

So yep, that's where I stand.  I'm glad I let it all out because I haven't been able to do that with very many people while living here in the conservative South.  Feel free to comment or ask questions.  Also, here's the UU website if you're interested:  http://www.uua.org/

Separation of Church & State

There's really nothing behind this post title other than I'm going to talk about church and school.  I'm not hugely creative and definitely not a writer but I figured I should probably title it something other than, "Church and the Class I'm Taking".

I'm not sure if I've mentioned this on my blog yet but I seem to go through crises of sorts when I graduate from school.  I think it's because even though I'm done with school I feel like I should still be in school for some reason.  Or maybe it's that I don't have a "career" lined up.  I don't know but it drives me to jump into things without thinking them through.

This time it was vet school.  Something I've always thought about but didn't act on because of my grades and confidence.  I also was turned off after working at an animal hospital for 3 years.  It wasn't until recently that I realized it wasn't because I didn't want to be a vet, it was because I didn't want to go into small animal private practice.  I want to focus on zoological medicine.

Recently I drove out to NC State to attend an informational session.  Good news is that with my graduate work my GPA now meets the minimum requirements.  I don't meet the requirements in "Veterinary Experience" nor do I have all of the required classes under my belt.  Which brings me to the point of this post.  I am officially an NC State non-degree student enrolled in Comparative Nutrition (online class).

I'm excited about this class because:
1.  It's not Organic Chem (this is another required course I don't have)
2.  The subject matter is animal nutrition which will give me some sort of an idea if this is the path I'd like to continue down.

In researching vet school I realized I should've majored in Animal Science rather than Biology.  C'est la vie.

SUBJECT CHANGE

I started going to a Unitarian Universalist church in Franklin.  I LOVE IT.  I've been a handful of times but I already feel more at home there than I have in any other church in a looooong time.  It's such a good feeling.  The service today was awesome.  The speaker (the church is lay-led; meaning we don't have a full-time minister so we have speakers every Sunday) today was HILARIOUS.  I cried with laughter and he even got tickled himself after describing explaining Easter to children: Jesus had a bad weekend, so....a magical rabbit left this chocolate bunny for you in the yard.  Yeah, doesn't have the same effect in a blog post. 

The funny thing about this going to church thing is that it's kind of like working out...you (actually, my husband and I) grumble about going, but once we get there we have such a good time and are glad we went.  It doesn't hurt that we get to listen to NPR's Wait, Wait...Don't Tell Me! on the way there.  It's also nice making friends outside of work.  Ya know, that separation and church and state thing.  :)



Recipe Verdicts

Is it really 5pm on Sunday already?!  The weekends go by so fast...and I'm definitely not prepared for the craziness that will surely be at work tomorrow.  First day of classes!

Let's talk about some food:



Mmmmmmmm...creamed corn...my favorite.  Grade: A+


The hubs actually made this recipe...not me.  He's a swell guy.  Grade: B  (not him, the recipe)


I'm surprised I made this considering I'm not a big fan of meat.  The flank steak came out well, the onion rings?...not so much.  I forgot to spray them after they were arranged on the pan so they ended up too floury from the flour they were dipped in.  :oP  Grade: B+ mostly due to user error and marinating time


Nothing to see here...just a regular tuna sandwich.  Grade: A


Average.  I might not've cooked the kale enough because it was kind of chewy.  Though, that might be the nature of kale.  I wouldn't know since I don't have kale that often.  This recipe also has you bake the potato in the oven and caramelize the onions (cook on the stove for 1 hour) which is ridiculous.  Stick that darn potato in the microwave and just soften the onions in a pan.  Sorry, but I'm not going to spend an hour on a pointless technique.  Grade: B-


This definitely didn't come out like the picture.  I'm thinking you're supposed to only cook the swirl side for a second or two.  Yep...just checked.  30 seconds to a minute.  I left them on longer than that so the cinnamon swirl cooked out.  Had this nice swirl valley through all the pancakes.  :)  This might be worth a second try.  Grade: A-

What I've Been Making

I admit, I've been a horrible blogger and have fallen off the food updates.  I know, shocking and extremely sad isn't it??

I tried to start up where I left off but Pinterest arranges the boards such that I have no idea whether I've blogged about a particular pin or not.

So I've just decided to focus on a select few:

These southwestern chicken wraps (I used real chicken instead of the chicken substitute) were good but not anything to rave about.


I made this broccoli salad for a family get together.  YUM!  I recommend it!

I do NOT recommend this one.  Tasted okay but I guess it needed about 30 more minutes in the oven.  I ended up tossing it.


This pasta was SUPER yummy.  I didn't want to pay $36 for the crab so I just used shrimp I had in the freezer.  I'd recommend it if company is over because it doesn't reheat well (too much butter).


Ho-hum veggie burger.  The hubs liked it but I think that had more to do with the toppings than the actual burger.


These were okay.  Definitely NOT the same taste as the 'original' oatmeal cream pies.  Probably wouldn't make it again.


Highly recommend this recipe.  So yummy.  A bit of a hassle to make, but worth it.  I lost a lot of cookie cups during the process though.  I'd recommend you use a well-greased pan.  Also, the cookie dough falls to make the cup shape when you take them out of the oven.  I was confused about that.  I kept waiting for them to fall while in the oven.


Made these last Sunday.  Definitely yummy, but don't expect a Twix taste.  Also, cookie based crumbles apart instead of being a hard crunch like Twix bars.
