Pin Worthy?

Freezer Breakfast Burritos - 5 out of 5, ABSOLUTELY pin worthy!  I never get enough protein in my breakfast during the week and this is the solution to that problem.  A great grab 'n' go breakfast.  I got a "My wife is awesome!" comment from my husband and his coworker said I need to take orders and sell them.  I admit, they aren't the best tasting burritos I've ever made but perhaps a little green chile will solve that problem.  :)

Hungry Girl Crunchwrap Supreme - 5 out of 5, ABSOLUTELY pin worthy!  So yummy, totally meat free, healthy, & super fast.  You can't ask for anything more from a weekday dinner.  That said, I did use full fat cheese and light sour cream instead of fat-free.  I also bought tostada tortillas instead of using baked tortilla chips...just seemed easier to me. 

Try 'em out, I think you'll be pleased!

Recipes February 26 - March 3

Why hello there wonderful readers!  Can you believe it's going to be March this week?  I admit, winter is my favorite season (I know, *gasp!*), however, I do love seeing the new growth and blooms that appear during spring.  It gives me a renewed energy and positive outlook on what's to come.  Farmer's markets, tubing down the river, cookouts, beer...oh the list goes on and on.

When I was going through my "I'm Hungry" board on Pinterest yesterday to pick out what I'll make this week, I realized something.  I pin mostly sweet things, soups/chili, and pastas.  And unfortunately, those things aren't what I've been craving lately...I have zero desire to eat meat right now but I have to get protein from somewhere!  So it took me a while to choose our meals for this week, but I managed.  Enough about that, let's get this show on the road!

1.  Lemon Chicken with Orzo - seems fairly healthy (I will be omitting those olives!)

2.  Crispy Tofu Triangles with Asian Dipping Sauce - I'm enthralled by crispy tofu...mainly because I've never been able to get mine crispy!!


3.  Baked Rangoons - these are my favorite from the American-Chinese buffet & I figured I need something else to go with the tofu triangles


4.  And for dessert I shall be making Fig Bars!  I'm skeptical about this one...seems somewhat time consuming.  We shall see.

Resolutions...a month & a half in.

Alrighty.  I purposely haven't posted about this until now.  Mainly because I get tired of the hype and also because I prefer to make goals for the year rather than resolutions.  Ah, semantics.  But for whatever reason I equate 'resolution' with the bad and 'goals' with the good.  Maybe because resolutions are often broken...or maybe it's my resolutions that are often broken.

At any rate, I have a note hanging on my bulletin board titled "2012 Goals".
  1. Get grasp on finances - budget, saving, reconciling
  2. Simplify & declutter - declutter calendar
You've already heard about the decluttering calendar.  I went through everything on my desk last week.  It feels wonderful!

As for our finances, even with a financial advisor/tax preparer for a mother, I have never been able to keep track of what comes in and what goes out.  Which is amazing for someone who manages 24 different funds at work.  And honestly, I think it's because I've never had a system.  I am very much a systematic, follow the rules kind of girl.

I don't remember how I stumbled across it, but I came across a blog post by Echoes of Laughter detailing a bill binder.



Considering I didn't have any system at all, I decided to give it a shot.  So far so good.  That said, we're only a month in.  :)

For me, it works.  It's all in one place and the papers don't pile up underneath my desk waiting for me to file them--which never happens by the way.  And it's great that I can see the entire month of bills in one glance.  I started writing down what we pay in groceries every week just so I can see what we spend on average.  Soon I'd like to create an actual budget to stick to.  But again, I need a system.

Have you had any real success with creating a budget & sticking to it?  What's your advice?

Recipes February 19 - 25

1.  Freezer Breakfast Burritos - one of the biggest, if not the sole reason I miss New Mexico.  Kick ass breakfast burritos.  Yes, I'm willing to cuss on this one.



2.  Hungry Girl Crunchwrap Supreme - my favorite from Taco Bell...on the rare occasion I go to Taco Bell.



Pin worthy?

1.  World's Best Lasagna - 3 out of 5  Hardly the world's best lasagna.  In fact, the sausage lasagna I made the other day was a heck of a lot better.  If you're going to make a lasagna, make this one:



2.  Reese's Peanut Butter Chocolate Cake - 4 out of 5  I've decided not to quit my day job when it comes to cake baking.  The baking is fine...it's the assembly that I suck at.  I cannot, for the life of me, ice a cake without getting crumbs in the icing.  And this one called for a chocolate ganache poured on top.  Um, apparently you're supposed to wait for it to cool and thicken.  I poured the entire bowl on top...chocolate was everywhere.  All over the cake stand, the counter, the front of the cabinet, and my dog.  Hilarity at its finest.  Good thing the cake was good.

Recipes February 12 - 18

I don't know what it is about us.  Without fail, we spend $100 at the grocery store every week.  Doesn't matter whether I'm making 5 recipes or 2...it's always about $100.  I wonder what the average monthly grocery bill for two people is right now.  Because $400 for two people seems a little high to me.

At any rate, here are my recipes for this week:

1.  I picked my drink recipe out of my juicing book.  It's actually a smoothie recipe that calls for a banana, 8 strawberries, & some apple juice.  I have some cranberry juice I need to use up so I'm just going to substitute that in for the apple juice.  The strawberries I have are frozen, so I imagine this smoothie will turn out pretty tart.

2.  "World's Best Lasagna"  Yep, you heard correctly.  The hubs has requested more lasagna.  Considering Valentine's Day is on Tuesday and I haven't gotten anything for him, that's the least I could do, right?  We shall see whether this is indeed the world's best lasagna.



3.  Reese's Peanut Butter Chocolate Cake - this is for the hubs as well.  I don't plan on putting those cups on top though.  It looks a little...overkill.  I say that but once I get going, there may be no stopping me!!




That's it for this week!  The lasagna lasted us so long last week that it was only today that I made the grilled cheese and tomato soup.  In other words, we still have soup leftovers to carry us through this week.

Verdicts from the week of the 5th

1.  Cherry-vanilla layer cake - 3 out of 5  Tastes good and the icing isn't horribly sweet, but not amazing enough to do again.  This was the first time I've made swiss meringue buttercream and...it was a disaster.  Everything was great until I added the vanilla and then it 'broke'.  That's the only word I can think of to describe it.  It looked like this:

So like any good researcher does, I went online and googled "swiss meringue buttercream problems".  I found Confections of a Foodie Bride, followed her instructions (popped part of it in the microwave, then whipped the entire thing again), and I couldn't believe it...a miracle had occurred right before my eyes.  The Internet...oh what would I do without you?

2.  Butterbeer - 5 out of 5  Best copycat recipe I've found.  I made a little too much topping, but I'll adjust next time.  Yes, I said next time. 

3.  Spinach-artichoke dip - 3 out of 5  Tastes super salty or garlicky to me.  Not a bad recipe though.

4.  Grilled cheese with tomato soup - 5 out of 5  I had no idea making homemade tomato soup was this easy and yummy.  I'll be making my own from now on.  I imagine it's more cost effective than buying canned soup too.  The grilled cheese called for three types of cheese but I'll think I'll just stick to my one slice of cheddar from now on.  P.S. I LOVE my immersion blender!!  Best invention ever.

5.  Tomato-sausage lasagna - 5 out of 5  Very time consuming (took over 2 hours from start to finish), but well worth the wait.  Best traditional lasagna I've ever made.  Lasted us all week too.  Speaking of which, I wonder if lasagna freezes well.  That would be the best way to do it...make it before hand & freeze individual servings for eating later.  Hmmmmmm....


One drawer at a time

A couple of weeks ago my friend posted a link on Facebook to a 365 day decluttering calendar.  Okay, I'm up for a challenge...let's do this!

This calendar has been so helpful.  Granted, there are some things that don't apply to me or I just don't do.  This week for example:
Monday - clean off left side of dresser top
Tuesday - clean off center of dresser top
Wednesday - clean off right side of dresser top

Well, I don't really have anything to clean off.  And boy does it feel good to say that!!

The week before last's tasks were so great.  Go through plastic bag/foil drawer (very needed), clean out one kitchen drawer (again, very needed), and we cleaned out & wiped down the fridge.  I don't know about you, but I very rarely give my fridge a good cleaning.

It just feels good and I wanted to share that with you guys.  Hopefully there's a 'clean out your office' task soon.  :oD

Monday - Put away or give away books on your desk
Tuesday - Declutter left desk
Wednesday - Declutter center desk
Thursday - Declutter right desk
Friday - Go through printer stand
Saturday - Clear off any bulletin boards of old things

It's about time!  As easy as last week was (clear off bedroom dresser & shelves), this week will be the opposite.  It'll be well worth it and I can't wait!

And counting...

I spend more time on Pinterest now than Facebook.  What is the world coming to?!  I pinned this 2 weeks ago and there have been 577 repins so far.  I had no idea an egg carton would take me so far in life.  :)

Funny thing is that I saw it was pinned by someone else as well and that one has well over 1,000 repins.  An egg carton.

Recipes Week of Feb 5th

Note: as soon as can figure out the html code to center the caption along with the picture, I'll fix this.  This left alignment is driving me crazy!

1.  I've decided that along with 2 savories & 1 dessert recipe to try, I'll try a drink recipe.  First one, of course, is butterbeer from the wonderful Harry Potter books.  I made this yesterday...review at the end of the week!



2.  "Healthy" Spinach & Artichoke Dip in honor of the Super Bowl



3.  Grilled Cheese with Tomato Soup - In our household, we have this more often than we have spaghetti.  I figured I'd see how sprucing up my basic grilled cheese and canned tomato soup will do.



4.  Tomato-Sausage Lasagna - I made this one last night...I'd estimate it took over 2 hours from start to finish.  :oP




5.  Cherry-Vanilla Layer Cake - I made this last night as well.  Quite a disaster, but I'll save that story for another day.



Verdicts from last week

1. Pumpkin Crunch - 2 out of 5  I didn't care for it, but I still ate it.  My husband, however, liked it and probably would rate it higher than I did.  I think the problem was that I only had an 8x8 pan-not the 9x9 it called for.  The topping (which was just a box of vanilla cake mix, mind you) didn't get cooked through so it was still powdery instead of crunchy.  Yeah, not my cup of tea.

2.  Creole Black Beans with Sausage - 5 out of 5  Yummy!

3.  Vegetarian Quinoa Chili - 4 out of 5 just because of the veggie content.  Felt like I got my recommended number of servings for the entire year.  I added a can of chipotle sauce + same amount in water and it made it super spicy--which I liked.
